Update on Octopus

Having said that we had only come across grilled octopus once in Tuscany, the very next time we went out to eat – there it was on the menu. This was one of our favourite restaurants, La Terrazza del Chiostro in the medieval town of Pienza.  The Chef, Alessandro Rossi had just got his first Michelin Star last November and we were looking forward to seeing what was on offer for lunch.  Imagine our surprise when at the top of the menu there was fresh octopus salad with potatoes and beans!  We just had to try it and it was fabulous!

Served on cold mashed potato and with some finely sliced French Beans – not a combination I would ever have thought to put with octopus – but it worked beautifully.  And the octopus?  Charred more than the one I had done earlier in the week and served with more salt after grilling – it was superb!   Something to learn from for next time!!!
