Pork loin is notoriously difficult to roast without it going dry (esp when the skin has been removed) - but cook it thickly enough and cook it with your favourite pork chop recipe (here butter, oil, rosemary and garlic) - perfect!! With Jerusalem artichope and truffle oil purée, carnival squash, carrot and broccoli!!

A very effective tweak to our goto venison ragù recipe - the origin recipe (https://smokedfinefood.co.uk/smoked-venison-ragu/) uses a couple of glasses of red wine, on this occasion we also added a touch of homemade blackcurrant syrup. The effect was very positive - a little added fruity sweetness complemented the ragù beautifully
