Hi,

My name is Mark and these pages reflect some of the enjoyment my wife Jackie and I have with our outdoor cooking. The idea of cooking over wood, or charcoal has a certain primeval appeal and we have been through a whole series of outdoor cooking devices and different BBQs over the years to get to where we are now!

That change to “where we are now” came with discovery of the ‘Big Green Egg®” inspired by clay cooking vessel developed around 3000 years ago in China, it now embraces the Japanese name “Kamado” actually meaning oven or fireplace.

The Big Green Egg really transformed our outdoor cooking and indeed led us to move a lot of our “indoor cooking” to our “outside oven”.  So when warm enough in the UK we cook and eat outside – when cooler – we often cook outside and eat-in!

The versitility of the Big Green Egg will hopefully become apparent as you “flick though these pages”. This blog started as a simple repository for ideas and to record our cooking “experiments” but is beginning to expand to include some “tried and tested” recipes as well as those used in the cooking experiments which are included in the Blog pages!

As well as being versatile the Big Green Egg is a very “forgiving” cooking device but one which also encourages surprising consistency and opportunities for experiment.

We do hope you enjoy the site and enjoy experimenting with some of the recipes!

Well it was going to be for Christmas Day but I am Well it was going to be for Christmas Day but I am so glad we ended up pencilling it in for today!  What a fabulous Sunday Lunch and a perfect way to celebrate being just over halfway to Candlemas!
This was a stunning piece of pork from @girlbutcher with loin and belly prepared as a Porchetta. As you would expect the meat was perfectly presented and the salt fennel and garlic stuffing with just a touch of chilli perfectly judged. Cooked for around hours, to a core temp of 92C and a crunchy crackly skin!  Served with Pommes Anna, spiced red cabbage and Jerusalem Artichoke purée.  I have usually rolled my own porchetta but I may just leave it to Charlotte from now on!!

A twist on the  Italian tradition of lentil and sausage for New Year’s Eve - on that occasion the lentils and sausage together represent ‘coins’ and the promise of good fortune - so also perfect@fro representing the gifts of the Magi - and in the Eastern church the feast of Christmas Eve - So Happy Christmas and Happy Epiphany one and all!!

The celebration of Christmas, and today is the Fea The celebration of Christmas, and today is the Feast of Saint John of the Cross and remember what is probably his best known statement - “In the twilight of life, we shall be judged on love alone.”
Based on that thought our love today was channeled through what might be thought of as a traditional Christmas ‘dinner’. Exquisitely tender and moist free range Norfolk turkey with garlic butter and mandarin! On a slice of ‘roast hog in a duvet’ spicy red cabbage, crunchy roast potatoes ……….. fantastic!

A bit of freelancing here - Sweet potato and lenti A bit of freelancing here - Sweet potato and lentil bake.  A ham based lentil filling enhanced with tomatoes, Cavolo Nero and shredded Brussels sprouts - with a sweet potato topping!

Limbering up for the season of winter feasting. A Limbering up for the season of winter feasting. A nice organic Norfolk Black turkey - it was cheaper butcher the turkey and produce a crown than it was to buy a crown!  So I saved myself £15 and also had 2 legs, 2 wings and a carcass ‘all free’. 
Playing with the legs first, these were boned out and the calcified tendons were removed (a bit of a fiddle but OK). The legs were then stuffed with haggis and tied with poultry bands and wrapped in clingfilm as you would a ballottine.
Roasted at 180C for around 40 mins which gave enough time to roast the potatoes and make the chickpeas and olive stew 
Great dish and a perfect way to use turkey legs.  Roast potatoes were great too!!!

The new Keel Crossing from Sunderland city centre The new Keel Crossing from Sunderland city centre to the Sheepfold and the Stadium of Light is very impressive.  A pity the same cannot be said for the position of this set of bollards flanking the shipping roll of honour that runs along the centre of the walkway!!!

A delightful early evening out @smallcanteen - our A delightful early evening out @smallcanteen - our first time and I am so glad we went!! I started with some great slow cooked sticky pork ribs served with a spiced apple compote and salad. This was followed by a delightful veal Ossobuco served on polenta and Swiss chard lovingly cooked by Sam.  These both paired well with a very good house red carafe. A shout out too for @charlie2497 looking after front of house so very well.  All in all a great evening and I suspect we will be back before the end of the month!!
